Food Customs in Mexico


In Mexico and some southem states the people eat tamales. In Yucatan, Tabasco, Chiapas and Campeche custom to eat tamales colados wrapped with leaf of bananas. This custom is for day the candelaria and day of dead.

Tamales Colados

Ingredients:

1 kg of mass for tortillas

2 Liters of water

500 grs of lard of pork

1 teaspoonful of grains of achiote

3 leaves of epazote

40 rectangles of leaf of banana, roasted

Landfill:

1 chicken

600 grs of leg of pork

4 garlic

8 peppers

A pinch of cumin

1 achiote

½ liter of broth

400 grs of tomatoes

3 leaves of epazote

Salt

*Sauce of chile habanero

Every year in Mexico city feast the Latin-American fair of the tamal.
